South Tyrol. Its majestic Dolomites. The vineyards that climb steep slopes. These are the ‘ingredients’ of a unique winegrowing recipe. We are in the mountains of the Eisack Valley, where the Pinot Noir from the classic line of the Eisack Valley Winery originates. Here, the vineyards extend over porphyritic soils with limestone deposits of dolomite rock. This particular soil composition, combined with the cool, sunny climate typical of the area, gives the Pinot Noir minerality and aromatic complexity. The altitude varies from 450 to 750 metres. This allows the grapes to ripen slowly and produces wines with lively acidity and fine tannins. Pinot Noir is one of the noblest red grape varieties in the world, appreciated for its versatility and its ability to express terroir. It finds an ideal habitat in South Tyrol, resulting in wines characterised by intense aromas of red berries, spices and floral notes. Vinification of the Pinot Noir of Cantina Valle Isarco begins with a hand harvest. The grapes are gently pressed and the must obtained ferments at a controlled temperature in stainless steel tanks, in order to preserve freshness and fruity aromas. Maturation on fine lees gives the wine greater complexity and structure. Bright ruby red in colour, the nose reveals an intense and complex bouquet, with notes of cherry, strawberry, violet and a slight hint of spices. In the mouth, it is dry, balanced and velvety, with fine tannins and a long, lingering finish. On the table it goes well with red meat dishes, game, mature cheeses and risottos.
Despite the fact that the Valle Isarco valley boasts a very old winemaking tradition, the beautiful cooperative winery was only founded in 1961, by 24 families. Cantina Valle Isarco is the youngest wine co-operative in South Tyrol and today, after more than 60 years of existence, can count on the work of no less than 135 members who cultivate a total of 150 hectares of vineyards, spread over 11 municipalities from Bolzano to the south of Bressanone. The Eisack Valley offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and, above all, terraced vineyards with their tidy stone walls. Here, the winegrowers do ‘heroic’ work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by warm summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco's annual production is around 950,000 bottles, divided between no less than 14 varieties, of which 10 white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's ‘white’ vocation is best expressed by the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
