The most autochthonous of the international vines grown in Oltrepò. Pinot Noir, originally from the French region of Burgundy, on the hills of the province of Pavia proves to be truly at home. It is no coincidence that the Oltrepò is the largest European reservoir of this vine, perfect to be worked in red, as in this case, but also in white or as a base for one of the famous regional DOCGs. Losito & Guarini's "C'era una volta" comes from pure Pinot Noir grapes, grown in the shadow of the 45th parallel, halfway between the North Pole and the Equator. Harvested by hand in boxes, the grapes are delivered to the winery to be first crushed and then sent to the maceration phase, in this case enriched by a macro-oxygenation, to obtain the perfect extraction of colour. This is followed by fermentation at controlled temperature with selected yeasts and refinement, in steel, until it is bottled. Bright ruby red in colour, it has intense aromas reminiscent of wild violets, cherries, berries and spices such as black pepper. In the mouth it is full, enveloping, soft and persistent. Pleasant tannin and good structure. Also perfect as an aperitif, with a board of cheeses and cold cuts it is simply ideal.
The story of Losito Guarini is a beautiful Italian story. It began back in 1910 when a very young Domenico Losito left Trani in search of fortune. He arrived in Seveso, north of Milan, where a few years later he opened a tavern. It sells, of course, wine by the glass, in this case served in the typical "scudela", accompanied by the specialties cooked by his wife. From one goal to the next, Domenico's business grows and prospers, and from the initial tavern it becomes a small company that combines the restaurant with the activity of selling wine at home. And so we reach 1968, when Luisa, Domenico's granddaughter and Michele's daughter, marries Mr. Guarini, also of Apulian origin, who sold wine wholesale in Como. At that point Losito Guarini is ready to make the great leap in quality, thanks to the construction of new and more modern bottling plants. In the nineties, finally, the new generations were involved in the family business, represented by Davide and Renato, and a new branch was opened in Oltrepò. Today Losito Guarini produces about 25 million bottles a year, obtaining numerous awards from national and international wine and food critics.
