The label bears the appellation Lago di Caldaro Scelto Classico. In the bottle is one of the most representative wines of the Alto Adige area, Schiava. A red described as "captivating, pleasantly light and with strong character." A mountain wine, without a shadow of a doubt, quite different from the full-bodied and structured reds that characterize other areas of Italy. In this case, the grapes used for production come from vineyards in Appiano and Caldaro. We are between 300 and 420 meters above sea level, on sandy moraine soils with a south/south-east exposure. After 8 days of fermentation, at a controlled temperature, in stainless steel tanks, the wine ages in tanks, also made of steel, before being bottled. Everything is done to safeguard the freshness of the fruit as much as possible. Brilliant ruby red in color, for that matter, this Schiava offers fresh, fruity aromas. On the nose, aromas of cherry, violet, yeast and a slight hint of hazelnut. In the mouth, on the other hand, it is racy and pleasant drinking, with soft tannins, great freshness and light notes of bitter almond on the finish. Also good when served slightly chilled, it is ideal paired with the classic South Tyrolean snack of speck, salami and cheese.
