Today we find ourselves in the heart of the Trentino peaks. Here, between the Adige Valley and the Valle dei Laghi, between 250 and 350 metres above sea level, Cavit creates this Cum Vineis Sclavis, Trentino DOC, 100% Schiava, an ancient indigenous grape variety. The secret of its unique character lies in the perfect combination of climate and soil. The cool breezes from Lake Garda and the temperature fluctuations between day and night give the Schiava grapes a crisp acidity and intense fruity aromas. On the other hand, the soils, consisting of gravel and porphyritic sand, ensure good drainage and give the finished wine minerality and flavour. The grapes are carefully selected in the countryside. After arriving at the winery, they are pressed and undergo maceration on the skins for about 7 days at a controlled temperature. This process allows all the colour and aromatic profile of the wine to be extracted, preserving its freshness. After alcoholic fermentation, there follows a period of ageing in stainless steel and cement, always in contact with its fine lees. In the glass, the colour is a lively, brilliant red, while the nose reveals intense, fragrant aromas reminiscent of cherry, raspberry and red fruit in general. Then floral notes and hints of almond that contribute to an inviting bouquet. In the mouth, on the other hand, it conquers with its crisp freshness and extreme drinkability, thanks also to the lovely persistent and mineral finish. Ideal as an aperitif or to accompany light hors d'oeuvres, on the table it goes well with cold meats and fresh cheeses, vegetable-based first courses or white meats.
