The Valtellina, with its terraced vineyards, is a fascinating but extremely hard land. Mechanization doesn't exist here. Every intervention in the vineyard is done strictly by hand and costs a lot, a lot of effort. From the winter pruning to the late summer harvest, when only the best grapes are picked by expert hands and delicately placed in 15-kilo crates. Care must be taken to ensure that the grapes are not damaged and that all the bunches reach the cellar in good condition. Garof, the wine proposed here by Mamete Prevostini, is a Valtellina Superiore DOCG produced with grapes from the Grumello subzone. The result of careful processing, this red wine undergoes malolactic fermentation in oak barrels, where it is also left to age for about a year. It is then put into the bottle, where it is jealously preserved for another eight months before release. In the glass it has a beautiful pale ruby red color. On the nose, it features notes of well-ripened red fruit stand out, accompanied by subtle hints of dried fruit and woodiness. on the palate it is velvety, harmonious and fresh. Pleasantly tannic, thanks to its remarkable structure, it is also very persistent. It is a wine capable of giving great satisfaction. On the Sunday table, just to give an example, it can magnificently accompany a large roast or a succulent pan of baked pasta.
