  • Sensations The flavour is of great structure and softness, with an aftertaste of dried fruit and toast, ideal with game, barbecued meat, braised meats and mature cheeses. It is an excellent accompaniment at the end of a meal.
  • Vinification Harvest: between September and October with exclusively manual selection. Drying out until December/January in fruit lofts. Crushing at the beginning of February with grape destemming. Fermentation temperature from 12 to 23 °C. Slow maceration for 30 days, 12 of which cold. Manual pressing at a frequency of 3 per day. Complete malolactic fermentation. Maturation in wood then in bottle. Natural stabilisation.

  • In the picturesque Valpolicella, Cantina Negrar has a history rooted in terroir. The tradition of cultivating and vinifying grapes goes back generations, and is proudly handed down. Amarone della Valpolicella DOCG Classico Collezione Pruviniano is a tribute to this heritage. Each sip tells a story of love for the land and winemaking mastery. The Negrar winery is a place where modernity meets tradition, creating wines that are true masterpieces of the oenological art.

    A historical reality in Valpolicella. A social winery, that of Valpolicella Negrar, founded in August 1933 by 'six local gentlemen' who united in a society to defend the territory from speculative investments. The aim, now as then, is to reach the consumer directly with products bottled in full respect of the local wine-growing tradition. A tradition that the winery's members cherish and safeguard with religious respect. Few people remember, but it is to the Negrar winery that we owe the birth of Amarone. That was in 1936. Today, the winery can count on around 600 hectares of vineyards, distributed in different areas of the Valpolicella Classica (but not only) and cultivated by around 230 members. It boasts an extensive production of wines that have won international critical acclaim, an environmental protection project and, above all, a line of high quality wines, the Domìni Veneti, which are exported all over the world. How much water has passed under the bridge since that distant August of 1933. And how much wine has been produced since then (and certainly drunk with satisfaction).
