If you think of Valpolicella, you can't help but think of its most immediate red wines. Certainly they struggle a bit to find their own slice of light, covered as they are by the long shadow of their noble elder brothers, Amarone and Ripasso. But if we think of the right combination for a simple dish, the choice is almost obligatory. You have to fall back on the immediate Valpolicella Doc. Perhaps Classico, as in this version proposed by the Cantina della Valpolicella Negrar, therefore produced only with grapes from the hilly and historical area of the denomination. Corvina 60%, Corvinone and Rondinella 15%. The remaining 10% is made up of other grapes allowed by the production regulations. The processing in the cellar is precise and the refinement is only in stainless steel so as not to deprive the young red of the lively and fresh cue that characterizes it so well. In the glass it has a beautiful bright red colour, with aromas reminiscent of ripe red fruit. In the mouth it is dry, warm, medium-bodied and well-balanced in the tannins. It was 1936. Today the winery can count on about 600 hectares of vineyards, distributed in different areas of Valpolicella Classica (but not only) and cultivated by about 230 members. It boasts a wide production of wines awarded by international critics, a project to safeguard the environment and above all a line of high quality wines, the Domìni Veneti, which are exported all over the world.
