  • Sensations The intense aroma has hints of cherry and spices. Your palate will thank you when from the first sip you discover a warm, full-bodied flavour with notes of dried fruit.
  • Vinification Harvest: end of September, beginning of October with exclusively manual selection. Crushing with destemming of the grapes. Fermentation temperature from 25° to 28° C. Maceration for 12 days with programmed punching-down at a frequency of 3 per day for a duration of 20 minutes. Storage in steel until February. Ripasso on the marc of Recioto, with contact for 15 days at a temperature of 15° C, with daily punching-down. Transfer to barrels at the end of May for 18 months. Complete malolactic fermentation. Maturation in wood, steel then in bottle. Stabilisation: natural

    Valpolicella Ripasso DOC Classico Superiore "La Casetta"
  • The Ripasso technique is typical of Valpolicella. It is used to give a boost to the fresh local red wines, exploiting the dried marc left in the cellar after the vinification of the noblest wines, Amarone in particular. La Casetta, specifically, is a very special Ripasso, born thanks to the continuous research and experimentation of Domìni Veneti's oenologists. It is produced through the re-fermentation of fresh Valpolicella with the marc of Recioto. The result is an absolutely original wine, with unparalleled characteristics of smoothness and complexity. In the glass it has a beautiful deep ruby red colour with violet hues. The nose amazes for the richness of its aromas ranging from very ripe red fruit to sweet spices. In the mouth, then, it proves to be a true champion. Full-bodied, warm and structured, with a long finish that prolongs the pleasure of drinking for several minutes. A great wine to pair with savoury meat dishes such as game, or rich, mature cheeses.

    A historical organisation of Valpolicella. A social winery, that of Valpolicella Negrar, founded in August 1933 by "six local gentlemen" who joined together in a company to defend the territory from speculative investments. The aim, now as then, is to get directly to the consumer with products bottled in full respect of the local winemaking tradition. A tradition that the members of the winery cherish and safeguard with religious respect. Few people remember it, but it is precisely to the Negrar winery that we owe the origin of Amarone. It was 1936. Today the winery can count on about 600 hectares of vineyards, distributed in different areas of Valpolicella Classica (but not only) and cultivated by about 230 members. It boasts a wide production of wines awarded by international critics, a project to safeguard the environment and above all a line of high quality wines, the Domìni Veneti, which are exported all over the world. So much water has passed under the bridge since that distant August of 1933. And how much wine has been produced since then (and certainly enjoyed with satisfaction).
