    • Vinification On arrival at the winery, the grapes are destemmed and crushed. The must and marc are fermented in special temperature-controlled tanks with a device for gently breaking up the cap, until the colour and aromas are completely extracted from the free-run must without pressing. At the end of winter, the Valpolicella Classico obtained in this way is re-fermented on the marc of classic Recioto and Amarone. In this way the wine takes on greater body and intensity when tasted. At the beginning of spring, after racking, the wine is left to age in large wood barrels. This is followed by bottling and refinement in the bottle.

    • For those who consider Amarone della Valpolicella a bit "too much", a bit too much, Ripasso always represents the right compromise between power and pleasure. This fine red wine proposed by Montindon, produced with grapes harvested in the hilly area of Sant'Ambrogio di Valpolicella, is no exception. Based on Corvina, Rondinella, as well as old indigenous vines and recommended varieties, the grapes are destemmed and crushed when they arrive in the cellar. The must obtained, and the pomace, are fermented in special temperature-controlled tanks until the colour and aromas are completely extracted, without pressing. At the end of winter, the Valpolicella Classico thus obtained is then "ripassato", i.e. it is slowly re-fermented on the marc of classic Recioto and Amarone. In this way, the wine takes on greater body and intensity. At the beginning of spring, after racking, the wine is transferred to large wooden barrels for the necessary maturation phase. At the end of this phase, the wine is bottled and left to rest in the cellar for a further period of refinement in the bottle. The result is an interesting wine characterised by a beautiful ruby red colour with garnet highlights. On the nose, the scents of cooked plum and morello cherry stand out, while the palate reveals a perfectly harmonious, full-bodied wine. It is the ideal glass to accompany red meat dishes, game or roasts.
