Regolo is one of the most popular wines in Sartori's vast production. It is also one of the most representative of its territory. If Valpolicella, in fact, is known throughout the world above all for the quality of its Amarones, it is the Ripasso wines that stand out for their versatility and quality. Valpolicella Superiore Ripasso DOC, Regolo is produced from grapes harvested in the estate vineyards located in the hilly area of Valpolicella, north of Verona. 55% Corvina Veronese, 25% Corvinone, 15% Rondinella and the remaining 5% of Croatina, this red wine starts its journey with a traditional vinification in temperature-controlled stainless steel tanks. The fundamental step, however, is the following one, that is to say the "ripasso" of the wine on the marcs of Amarone, in the month of February. During this second very slow fermentation, the wine is enriched with tannins, which ensure a good longevity, and is ennobled thanks to the extraction of the typical aromas of Amarone. The wine is then left to mature in medium and large casks for a period of 18 to 24 months. Bright garnet red in colour, the nose reveals an intense and persistent bouquet. In the mouth it is dry and velvety, with hints of cherry. The body is robust and harmonious. A red wine with great personality, this Ripasso goes well with winter dishes.
