    • Vinification The grapes, carefully selected in the vineyard and harvested in small crates, are dried for about 5 months in dry, well-ventilated rooms. When they reach the ideal degree of drying, they are pressed and fermented in steel tanks. The very slow fermentation lasts until late spring, resulting in the pleasant residual sugar that characterises this wine. Refinement in large oak barrels lasts 6 months. After bottling, the wine rests for a further 2 months in the bottle.

    • Recioto della Valpolicella Classico DOCG, Rerum is a fantastic end-of-meal wine. Sartori produces it from grapes harvested at full maturity in selected vineyards located in the hills north of Verona. 50% Corvina Veronese, 30% Corvinone, 15% Rondinella and Cabernet for the remaining part, the production of this sweet red wine starts with a drying of the grapes for about 4 or 5 months, in dry and well ventilated rooms. When the grapes reach the ideal degree of drying, they are pressed and fermented in steel tanks. The very slow fermentation continues until late spring, leaving a pleasant residual sugar that characterises this wine. The wine is aged in large oak barrels, where it is left to rest for about 6 months. Then, after bottling, the wine rests for a further 2 months in the bottle. Garnet red with purple highlights, this Rerum has aromas reminiscent of ripe fruit and violets. In the mouth it is velvety and pleasantly sweet. A natural companion for all desserts, it is best appreciated when served with a slice of almond cake or with simple biscuits.

      In 2018, the Sartori winery turned 120 years old. This fact is probably enough to understand that it is one of the most incredible realities of the Veronese territory. The story of Sartori began in 1898 when Pietro bought his first vineyard in Negrar, in the heart of Valpolicella. An "eccentric personality, but magmatic from a business point of view", as Pietro Sartori is described by his heirs, he was one of the most appreciated "restaurateurs" in the area. In fact, the Sartori trattoria was an essential address for merchants, businessmen and small industrialists in the area, to whom Pietro never failed to offer an excellent Veronese Rosso wine, as it was called at the time. Hence, first the decision to expand his business as a wine merchant, and then the decision to start producing on his own, so that good wine would never be missing from the tables of his loyal customers. Today, Sartori is a successful company with an international vocation, achieving over 80% of its turnover in more than 50 countries, in Europe, North and South America, Russia and South East Asia.
