  • Sensations Ruby red in colour with garnet hues. The nose shows tertiary notes of oak and walnut, followed by hints of blueberry and morello cherry. On the palate it is full with good structure and tannic finish, the aftertaste reveals hints of cherry and morello cherry.
  • Vinification After careful drying, in early February the grapes are destemmed and softly crushed, the must and marc ferment for a long time. Then, after some racking, the wine is first transferred into special large oak barrels for about two years, followed by a further 12 months of ageing in new French oak barriques. Finally, further ageing in the bottle follows for 6-8 months.

  • When faced with a great oenological classic like this Amarone della Valpolicella Sant'Ambrogio there is little to say. It only needs to be tasted. Because it is a wine of great prestige, produced with the best grapes from the Sant'Ambrogio vineyard, located right in the heart of the Valpolicella Classica area, the most historic and vocated zone for the production of this wine. It is the result of a slow and careful processing of the grapes, especially Corvina and Rondinella, cultivated using the traditional Veronese pergoletta system, which, at the expense of very heavy work in the vineyard, makes it possible to obtain grapes of superior quality. The bunches are harvested at the beginning of October, when there is already a slight over-ripening. After the long drying process, during which the grapes lose much of their weight concentrating aromas and sugars, maceration and fermentation, the wine is aged for a long time, first in large barrels and then in barriques. The result is a wine characterised by an intense, dark colour, with heady aromas of cherries in spirit and liquorice. It is a wine that calls for very tasty pairings, such as stewed game or very old or spicy cheeses.

Giorgio district, famous for its Romanesque parish church, from which the prestigious Amarone is obtained. Or those of Grola, one of the best vantage points in Valpolicella, where the technique of appassimento has been practised since Roman times, and where today the best Recioto is produced. The main grape varieties used are Corvina, Rondinella, Molinara, the three basic grapes for all the typical Valpolicella wines, but also Cabernet, Merlot, Garganega, Pinot and Dindarella, the autochthonous variety par excellence.
