Vinification takes place with maceration for 20 days, alcoholic fermentation for about 45 days using indigenous yeasts, and finally ageing for about 7 years in small Slavonian barrels to mature the wine.

    • A symbolic wine of the Veneto wine-growing tradition, and of the Quintarelli winery, Amarone della Valpolicella Classico DOCG is a little jewel of ‘alta enologia’ (high oenology). It originates from the hills of Negrar, in the heart of the Classica zone, the most historic and world-renowned for the quality of the wines produced there. The Quintarelli winery, for its part, is undoubtedly one of the most renowned and respected in Italy. Obtained from a traditional blend of Corvina (55%) and Rondinella (30%), it is enriched by an international touch of Cabernet, as well as Sangiovese, Nebbiolo and Croatina, all together amounting to about 15%. Corvina, the backbone of the blend, offers elegance and complexity, with notes of cherry and spices. The Rondinella, on the other hand, contributes freshness and structure. The production process is long and meticulous. It begins with a careful selection of the best grapes in the field. These are left to dry naturally for several months in fruit lofts. This process concentrates the sugars and enriches the aromatic components. The subsequent vinification involves maceration for about 20 days and an alcoholic fermentation that can last up to 45 days. Slow and controlled, fermentation is activated by means of indigenous yeasts. Subsequent ageing takes place in Slavonian oak barrels, where the wine rests for about 7 years. In the glass, Quintarelli's Amarone has a deep garnet red colour, dense and luminous. On the nose, an intense and complex bouquet, with hints of black cherry, bitter almond, tobacco, liquorice, cocoa, oak and a very intriguing spicy touch. An incredible bouquet in continuous evolution. In the mouth, it is warm and powerful, with a full body and a perfectly balanced tannic structure. The finish is long, refined and persistent, with notes of dried fruit and sweet spices. A wine destined for very long ageing (up to 25 years), it is the ideal companion for robust and richly flavoured dishes.
