The taste is very fine, warm and with rounded tannins, it is perfectly balanced by a fresh vein that refreshes and, combined with the tannic framework, contributes a unique depth.
  • Vinification Quintarelli's Valpolicella Classico Superiore DOC is obtained half from grapes dried in boxes for a couple of months and half from ‘fresh’ grapes. It is a wine with a great capacity for ageing, spending six years in large Slavonian oak barrels to reach full maturity before being bottled.

It is born in the heart of Valpolicella, in its historic part. An area characterised by an enchanting hilly landscape, where vineyards alternate with woods and olive groves, creating a unique ecosystem that profoundly influences the character of the local wines. The predominantly calcareous and basaltic soils give the grapes a distinctive minerality, which is reflected in a vibrant freshness in the glass. The hills, set at different altitudes and well exposed to the sun, enjoy an ideal microclimate, mitigated by the presence of nearby Lake Garda, which regulates temperatures and favours optimal vine growth. The basis of this red wine is a skilful mix of native and international vines: Corvina (55%), Rondinella (30%) and Cabernet (15%). The grapes are harvested by hand and half are left to dry in boxes for about two months, a process that concentrates the sugars and intensifies the aromas. The other half of the grapes are vinified fresh. After fermentation, the wine matures for six years in large Slavonian oak barrels, a long period that allows it to develop extraordinary complexity and remarkable smoothness. This prolonged ageing favours the integration of the tannins and the evolution of the aromas, creating a perfectly balanced and nuanced wine. In the glass, it has an intense ruby red colour, enriched with garnet hues. On the nose, the bouquet is broad and varied, with notes of sour cherries and jammy plums mingling with hints of macerated flowers, cocoa powder, pine needles and tobacco. In the mouth, it is warm, with round, velvety tannins. The natural freshness balances the structure, giving the wine a pleasant feeling of balance and length. It can also be appreciated immediately, let it be clear, but its real potential is only fully expressed after 10-15 years, when it develops further tertiary notes that enrich its aromatic profile. Perfect with structured dishes, this Valpolicella pairs beautifully with red meats, braised meats, game and mature cheeses.
