A wine different from those that usually bring the Quintarelli company to mind. A dry white, Veneto IGT, son of Valpolicella. It comes from an unusual blend of grapes where Garganega accounts for 70% of the mass. The remaining 30% is divided between Chardonnay, Sauvignon and Trebbiano. After the harvest, the grapes are brought to the cellar for quick processing. It starts with a short 12-hour maceration on the skins at a low temperature, followed by alcoholic fermentation at a controlled temperature. At the end of this phase, ageing takes place in stainless steel tanks, in contact with the fine lees for several months. This process makes the wine richer, increasing its complexity and intensifying its aromas. Intense straw yellow in colour with golden highlights, the nose immediately reveals a complex and seductive bouquet, with notes of apricot, ripe yellow fruit, white flowers and hints of aromatic herbs, as well as flint. In the mouth, it is fresh and full-bodied, with a decisive minerality that enhances its structure. The finish is long, with a pleasant return of fruity and herbaceous sensations that immediately invite one to take another sip. An extremely versatile wine, it is perfect as an aperitif. On the table it accompanies fish dishes and light first courses.
