After malolactic fermentation, it is transferred to barriques where it matures for a few months before being bottled.

    • Valpolicella is a land that smells of wine. In the heart of Veneto, just a stone's throw from Verona, this region enchants with its gentle hills dotted with vineyards. This is where the Valpolicella DOC Famiglia Pasqua is born, a wine that tells a story of passion and dedication. This Valpolicella, in particular, is the result of a well-balanced blend of indigenous grape varieties: Corvina (60%), Corvinone (25%), Rondinella (10%) to which a small percentage of Croatina is added. The Corvina, in particular, lends elegance and a distinct freshness. The Corvinone contributes structure and delicate tannins, while the Rondinella and Croatina add aromatic complexity and fruity nuances. Production follows traditional methods. The carefully selected grapes are pressed and macerated for 8-10 hours at a controlled temperature. This is followed by alcoholic fermentation, again at a controlled temperature, during which frequent pumping over takes place to favour the extraction of colour, tannins and aromas. After malolactic fermentation, the wine then matures in barriques for a few months, acquiring greater complexity. Intense ruby red, the nose of this Valpolicella reveals a fragrant bouquet of fresh red fruits, such as currant and raspberry. In the mouth it surprises with its good structure and pleasant balance between alcohol and freshness. The red fruit notes emerge strongly, intertwining with a light spicy vein, made more enveloping by the passage in wood.
