Corvina, an indigenous Valpolicella grape variety, gives the wine structure and cherry aromas. Croatina adds complexity and spice, while Merlot gives the blend softness and roundness. The grapes, harvested by hand, are dried in wooden crates in a fruit cellar. This drying process concentrates the sugars and aromas, making the wine more intense and complex. Subsequently, vinification takes place in steel, to preserve the freshness of the fruit, and ageing in oak tonneaux, to give the wine spicy and vanilla notes. In the glass Passione e Sentimento is an intense ruby red colour. The nose reveals a complex and enveloping bouquet, with notes of ripe red fruit, sweet spices and a slight hint of vanilla. In the mouth, it is balanced, round and soft, with velvety tannins that envelop the palate. The finish is long and persistent, with notes of dried fruit and spices.
