    • Sensations The colour is an intense garnet red, with ruby shades. The bouquet is intense and persistent with a clear scent of spices, cinnamon, absinthe, tobacco and wild rose. The taste is full and elegant, with soft, enveloping tannins. The spicy and woody flavours blend perfectly.
    • Vinification The grapes, harvested exclusively by hand, arrive at the winery intact and are quickly crushed and delicately destemmed in order to extract only the noblest and most aromatic fractions from the skin and the outermost part of the berry. Fermentation takes place in temperature-controlled tanks. Maceration on the skins lasts about 8 days, during which periodic soft pumping over is carried out to allow the must to take possession of all the trace elements present and to delicately extract the colouring material. Racking takes place only when all the sugar has been transformed into alcohol.

    • We are in the presence of one of the symbolic wines of the Marchesi di Barolo winery. Barolo DOCG della Tradizione is made from pure Nebbiolo grapes from the winery's vineyards on hills with good slopes and perfect exposure. Here the grapes are able to reach full maturity, developing a vigorous but balanced character, while ensuring fine and elegant aromas. After vinification, the wine is initially aged in small oak barrels and then assembled in traditional large Slavonian oak casks. The right mix of these containers contribute to making this Barolo harmonious and balanced. Intense garnet red in colour with ruby shades, this Barolo immediately reveals an intense and persistent bouquet, with a clear hint of spices, cinnamon, absinthe, tobacco and rose. The palate reveals a full, elegant wine with soft, enveloping tannins. Spices and woodiness blend perfectly. Good from a young age, this Barolo Tradizione reaches its peak after many years. There is therefore no hurry to uncork it and you can wait patiently for the right occasion. It is the ideal companion for traditional Langa egg pasta dishes, such as tajarin or meat agnolotti. For cheese lovers, this Barolo can be served with sheep and goat's milk tome, or well matured hard cheeses.
