We are in the heart of the Barolo region. Here the main grape variety is obviously Nebbiolo, used in purity by Mirafiore to produce this elegant Barolo DOCG. The grapes come from a careful selection of vineyards located in the municipality of Serralunga d'Alba, medium and high hillside plantings, with excellent exposures to the south, southwest and west. The soils, needless to say, are typical of the Langa, with a clear prevalence of clay and calcareous marl. Fermentation is traditional and takes place in stainless steel vats, lasting 12-15 days at a controlled temperature. This is followed by a long stay of the wine on the skins, "a cappello sommerso", for a further 30-40 days. This phase is crucial as it allows a perfect extraction of the polyphenolic substances from the grape skins. At the end of the vinification process, Barolo Mirafiore matures for two years in oak barrels of medium and large capacity, and then undergoes a further period of refinement in the bottle before being released for consumption. The long maceration and limited racking carried out during refinement allow the development of tertiary aromas to be anticipated even before bottling. In the glass, therefore, the wine has a beautiful garnet red colour and good intensity. The nose is reminiscent of spices, such as nutmeg and black pepper, aromatic herbs, such as bay leaves, and ripe red fruit. In the mouth it reveals itself to be an important wine, with powerful and harmonious tannins and a marked acidity that results in a very long finish. It is ideal with red meat dishes and medium or long aged cheeses. True enthusiasts, however, do not miss the opportunity to sip a glass at the end of a meal, perhaps while chatting and tasting a sliver of excellent dark chocolate.
