Barolo DOCG from the commune of Monforte d'Alba, the expression of a soil rich in marl and clay. In the commune of Monforte d'Alba, in fact, a structured, important and very full-bodied Barolo is born. Specifically, the one proposed here is signed by the San Silvestro company and is the result of a pure processing of Nebbiolo grapes, cultivated in vineyards rooted in what is defined as Helvetian soil, rich in marine fossils. At the end of processing, the wine matures in large Slavonian oak barrels and then, at bottling, matures in the bottle for a long time before release. A garnet red of medium intensity, the nose immediately reveals fine and intriguing aromas. Spicy notes of vanilla, cinnamon and green pepper. In the mouth, however, it is pleasantly ethereal and intense. A wine of exceptional richness, great harmony and completeness. The tannins are powerful but well balanced by a pleasant sensation of softness. A wine destined for long, very long ageing, it is not afraid to remain a few years in the cellar to evolve. Even 10 years, its producers are ready to guarantee. On the table it goes well with game, braised meats and truffle dishes. It should also be tried with mature and flavoursome cheeses.
