Vinchio Vaglio offers an excellent Barbaresco DOCG here. The other Nebbiolo, as it could be called, the 'younger' brother of the noble Barolo. A wine of great personality and charm, this Langa red is the result of careful processing of the best grapes from selected vineyards. Once in the winery, after destemming-crushing, the grapes give life to the must, which in turn is transferred to vertical fermenters, where the delicate fermentation and maceration phase begins. This lasts approximately 40 days and allows the extraction of aromas and polyphenolic substances present in the skins. At the end of the transformation, the wine undergoes a slow maturation in wood. In this case, 40 hectolitre Slavonian oak casks are used, where the wine rests for about 18 months, acquiring the elegance and austerity typical of Nebbiolo-based wines. In the glass it has a beautiful bright red colour, with possible orange reflections, due to the slow ageing process. The nose is intense and ethereal, with floral notes reminiscent of roses and violets, to which dried fruit aromas are added. The palate reveals a wine characterised by a full, austere but velvety flavour. Great persistence and harmony in all its components. Try it with first courses with meat sauces, braised meats and game. Also excellent with the classic board of mature cheeses.
In 1959, the year of its foundation, there were only 19. Today, the members of the Cantina Cooperativa Vinchio e Vaglio Serra number almost 200. In total, they manage around 450 hectares of vineyards with care and passion. The vineyards, mostly on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also helped by the nature of the soils, whose mineral components guarantee the production of high quality wines. The wine cellar, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
