    • Vinification The grapes, harvested by hand, are delicately destemmed, taking care not to break the skin of the berries. A pre-fermentative maceration of 24-48 hours is carried out, followed by alcoholic fermentation in stainless steel for 23-28 days at a controlled temperature not exceeding 28°C. After malolactic fermentation, the wine is aged in new (35%) and second-passage (65%) French oak barriques for 12 months. After a 4-month passage in stainless steel, "Carminium" is bottled and aged for at least 12 months before being presented on the market.

    • Everything in a 0.75 cl bottle has a special meaning for those who produced it. Even the label. As in the case of Inama, which, on its website, for each reference tells us a little something that allows us to better appreciate its work. In the case of this Carminium, for example, the label is evocative of the place of origin. The Oratory of San Lorenzo, a place of peace and quiet, is the area where the Carmenere grapes used in purity come from. In the centre of the vineyard, there is an old mulberry tree. During autumn, the leaves of the Carmenere turn red, while the mulberry tree turns yellow. On the label, however, the tree is red, like the vines, symbolising the profound bond between the elements and the vineyard itself.An immediate wine, without neglecting complexity and finesse, this Carminium, Colli Berici DOC is the result of a particularly careful hand harvest, followed by a pre-fermentation maceration of 24-48 hours, and alcoholic fermentation, in steel for just under a month. This is followed by malolactic fermentation and maturation in French oak barriques, part new (35%) and part second-passage.       The history of the Inama winery is deeply linked to that of its founder, Giuseppe Inama, who for over forty years invested his energies in the vineyards on Monte Foscarino. What he considered, probably rightly, to be one of the most important territories in the Soave area. The winery is located in San Bonifacio, in the province of Verona. The first bottles produced by Inama date back only to 1991. The first wine was a Sauvignon, a new variety for the area, which was called 'Vulcaia', to emphasise the uniqueness of a soil of ancient volcanic origin that deserved to be enhanced with shrewd vinification and a focus on quality rather than quantity. Today, the winery is run by Stefano, Giuseppe's son, who is proving to be one of the area's most eclectic winemakers, capable of daring with innovative choices that often break with tradition. With him are Matteo, Alessio and Luca, who represent the third generation of the family. 30 hectares of land, mainly cultivated with white varieties, and conducted with passion and competence.
