It is without a shadow of a doubt the most representative wine of the historic Cantina La Versa. We are talking about the ‘mythical’ Testarossa, Metodo Classico Brut, a true oenological excellence. 100% Pinot Noir, the winery is located in Santa Maria della Versa and is known for the quality and vastness of its historic vault of old vintages. After careful harvesting, the grapes undergo a soft pressing to extract only the flower must, which is then fermented at a controlled temperature with selected yeasts. The cuvée is then bottled to start the second fermentation, which is activated in this case thanks to strains of yeasts exclusive to the La Versa Winery. A slow process that gives the wine complexity and finesse. Maturation of Testarossa lasts for about 60 months, followed by a further resting period of at least 6 months in the bottle after disgorging. This long maturation process contributes to developing the wine's distinctive characteristics, making it a product of extraordinary quality and refinement. To the eye, Testarossa has a creamy white mousse and a brilliant colour. The perlage is subtle and persistent, a sign of careful workmanship. On the nose, it offers a complex bouquet, with hints of currants, toasted hazelnuts and bay leaves. In the mouth, it stands out for its aromatic persistence, with a perfect balance between acidity and smoothness.
