Vieilles Vignes, on the other hand, is indicative of the fact that this red, 100% Pinot Noir, comes exclusively from the processing of grapes from historic vineyards that can be over a century old. In the winery, winemaking involves high-temperature fermentation, with daily tastings, in steel tanks. At the end of this transformation phase, after racking and malolactic fermentation, the wine is passed into oak barrels for a period of maturation lasting at least one year. This reveals a wine characterized by a beautiful crimson red color that turns to garnet with age. On the nose, the aromas follow the classic Pinot Noir spectrum, with notes of cherry, gooseberry and the black currant, to notes of underbrush, mushrooms and spices such as cinnamon.
