Domaine de Bellene offers an interesting red from Burgundy, Côte De Nuits Villages Vieilles Vignes. For experts, this name is enough to evoke a wine of great personality. The Villages mention, in fact, refers to particularly suited vineyards, located only where conditions, of soil climate and exposure, are optimal. Vieilles Vignes, on the other hand, is indicative of the fact that this red, 100% Pinot Noir, comes exclusively from the processing of grapes from historic vineyards that can be over a century old. In the winery, winemaking involves high-temperature fermentation, with daily tastings, in steel tanks. At the end of this transformation phase, after racking and malolactic fermentation, the wine is passed into oak barrels for a period of maturation lasting at least one year. This reveals a wine characterized by a beautiful crimson red color that turns to garnet with age. On the nose, the aromas follow the classic Pinot Noir spectrum, with notes of cherry, gooseberry and the black currant, to notes of underbrush, mushrooms and spices such as cinnamon. A big-hearted and powerful wine, it is full and fleshy in the mouth, with well-smoothed and pleasant tannins. Its great structure makes it perfect as a wine to pair with savory dishes, juicy meats such as roast pork or lamb. Excellent with well-flavored cheeses.
