Domaine Pillot-Henry's Nuits-Saint-Georges AOC well represents the elegance and complexity of Pinot Noir from one of the world's most vocated terroirs. The grapes used for its production, in fact, come from the villages of Corgoloin and Comblanchien, where the vineyards insist on gentle slopes, in an ideal microclimate for the maturation of Pinot Noir. Domaine Pillot-Henry uses only selected grapes, harvested by hand. The best fruits are then vinified, preserving their purest essence. After fermentation, Nuits-Saint-Georges AOC matures for 12-14 months in barrels, at least half of which are new. During this period of rest, it is enriched with tertiary notes and an elegant structure. The wood gives the wine softness and depth, without ever overwhelming the typical freshness of Pinot Noir. In the glass, one is enchanted by its intense ruby red colour with garnet reflections. On the nose, ripe red fruits, such as cherry and raspberry, intertwine with notes of sweet spices, violets and leather, creating an elegant and refined bouquet. In the mouth, it conquers with its harmony and complexity. A wine to be enjoyed slowly, to appreciate its evolution over time.
