  • Vinification Harvested by hand. The harvest is selected on a sorting table and between 30% and 70% of the grapes are destemmed, depending on the vintage. Fermentation and maceration take place slowly in a concrete tank for 15-20 days, using only wild yeasts. We perform daily pumping over to fix the colour and aromas and control the temperature of the must. We press and fill oak barrels with different wines. We age for 10 months without racking. We use less than 10% new oak. The wine is not filtered or aged. We add very few sulphites.

    Bourgogne Rouge "Aux Seurrets" 2022
  • Clos Du Moulin Aux Moines is located in Burgundy, in the commune of Auxey-Duresses. Here, the soils are clay-limestone and the microclimate creates ideal conditions for growing vines, especially Pinot Noir. Located near Meursault, Auxey-Duresses is less well known than other areas of Burgundy but offers wines of great value. Pinot Noir, the noble Burgundy grape, is known for its ability to express the characteristics of the terroir in an extraordinary way, producing elegant and complex wines. In this case, the grapes come from selected vineyards located on plots of great value that give the wine a fine and harmonious structure. The production of Aux Seurrets follows strict biodynamic practices. The grapes are harvested by hand, with careful selection on a sorting table. Depending on the vintage, between 30% and 70% of the grapes are destemmed. Fermentation and maceration take place slowly in cement tanks for 15-20 days, using only indigenous yeasts. During this period, daily pumping over helps to fix the colour and aromas, as well as to control the temperature of the must. After pressing, the wine is transferred to oak barrels of various passages, with less than 10% new oak, for ageing for 10 months without racking. The wine is neither filtered nor refined and very few sulphites are added only when necessary. On the nose, delicate notes of cherry and cocoa merge into a fine and inviting aromatic bouquet. In the mouth it reveals a beautiful structure and well-integrated tannins. The freshness and purity of the Pinot Noir clearly emerge, making each sip a particularly pleasant experience. It is a wine that invites you to savour it slowly, appreciating every nuance.

    Clos du Moulin aux Moines is a place of extraordinary beauty, situated on the border between the communes of Auxey-Duresses and Meursault, in the heart of Burgundy. This charming corner of (wine) paradise has experienced quite a renaissance since 2009, when Willy Roulendes, with a long experience at Domaine de Montille, took the reins of the winery. His arrival marked the beginning of an ambitious conversion of the vineyards, first to organic and then to biodynamic, turning the Clos into a symbol of sustainable agriculture and natural viticulture. For over a thousand years, this place was run by the monks of the abbeys of Cluny and Cîteaux, who worked these lands with dedication and spirituality since 960. Evidence of this remote monastic past is still visible, thanks to a splendid Benedictine chapel dating back to 1650, a dovecote and a nobleman's house surrounded by the 'Clos' that encircles the vineyards. Willy Roulendes' work is distinguished by the adoption of oenological practices that respect the raw material. Fermentation takes place in cement vats with indigenous yeasts, followed by long macerations that can last up to 20 days. The use of new barriques is kept to a minimum so as not to overpower the natural characteristics of the wine. In addition, the use of sulphites is limited, and no filtration is carried out, thus preserving the purity and authenticity of the final product.
