  • South of Burgundy, in Romanèche-Thorins, comes the Moulin-à-Vent AOC Empreinte by Paul Janin et Fils, a red wine that tells the story of a unique territory and a noble and little-known grape variety. We are talking about Gamay, which in this case ripens on highly degraded granite soils, foothills and ancient alluvium. A geological mosaic that gives the wine minerality and complexity. The vineyards, with an average age of around 30 years, are divided into three carefully selected plots, where nature reigns supreme. The philosophy of Paul Janin et Fils is based on painstaking work in the vineyard. Each bunch is carefully selected to ensure maximum quality. The yield is deliberately low, with only 20 hectolitres per hectare, in order to concentrate the grapes as much as possible and obtain a wine of great character. Vinification is carried out using artisanal methods, respecting the integrity of the fruit. Spontaneous fermentation and light carbonic maceration enhance the fruity and floral aromas of Gamay, while ageing in French oak barrels gives the wine elegance and complexity. On the nose, this red wine offers an intriguing bouquet of ripe red fruits, sweet spices and mineral notes. In the mouth, elegant tannins and a lingering finish. A wine of great finesse that captivates with its complexity and harmony. A versatile wine, it pairs perfectly with a wide variety of dishes. Perfect with red meat, game and mature cheeses. This beautiful family estate is today run with sensitivity and passion by Eric Janin, who made his first harvest in 1983. Under the watchful eye of his father, who retired in 2008, Eric has continued to cultivate the family winemaking tradition, maintaining a strong link with the past and carrying out practices that enhance the finesse and delicacy of the wine. The Paul Janin et Fils vineyards extend over eight hectares, spread over several crus in the prestigious Moulin-à-Vent terroir. This appellation, known for its powerful and long-lived wines, owes its name to the ancient windmill that dominates the landscape. The predominantly granitic soils offer ideal conditions for the cultivation of Gamay, the region's typical grape variety. Eric Janin's production philosophy is based on an approach that respects tradition and nature. Viticultural practices include sustainable viticulture, with a focus on soil and vine health. In the cellar, fermentation is conducted naturally, with minimal intervention to allow the wine to fully express its terroir.
