  • Sensations Colour: bright straw yellow with fine, persistent perlage. Nose: complex, fruity, light, with hints of bread crust, white flowers, particularly orange blossom with a light, pleasant caramel note. Taste: nice soft and round initial sensation, fresh, savoury, persistent with hints of leavened bread.
  • Vinification Vinification: The grapes undergo direct pressing followed by static decantation of the must at 14 °C for about 24 hours. Alcoholic fermentation, at a temperature of around 16 °C, lasts for about 20 days. Ageing: the wine is kept in steel tanks on noble lees at a controlled temperature for about 7 months so that natural stabilisation of the wine takes place. Malolactic fermentation is not carried out. Fermentation: the "tirage" operation (pouring in of the "liqueur") is carried out when the wine undergoes re-fermentation in the bottle for about 40 months. The 'degorgement' (disgorgement) then takes place, at which point it is ready for a final rest period of six months before being marketed.

  • When you think of Piedmont as a wine region, you often think of its many good red wines. But, it is always good to remember, Piedmont is also a special land for the production of whites and especially bubbles. The latter, in particular, are as good as they are rare. Despite being DOCG wines, in fact, Alta Langa still expresses itself in small numbers. A few bottles destined for the most demanding enthusiasts. Like this bubble proposed by Vinchio Vaglio, 80% Pinot Noir and 80% Chardonnay for the remainder. Harvested when perfectly ripe, the grapes are subjected to direct pressing, followed by alcoholic fermentation for about 20 days. The wine thus obtained is stored in steel tanks on noble lees at a controlled temperature for about 7 months, waiting for a sort of natural stabilisation to occur. After bottling and 'tirage', the second fermentation starts, which makes the wine effervescent. The subsequent phase of maturation in contact with the yeasts lasts about 40 months. Poured into the glass, Vinchio Vaglio's Alta Langa DOCG reveals a beautiful bright straw yellow colour, well supported by a fine and persistent perlage. The nose is complex, fruity, with hints of bread crust, white flowers, and a pleasant caramel note. In the mouth it is soft and round, fresh and savoury. Persistent bubbles, with clear hints reminiscent of leavened bread. Ideal as an aperitif, it is simply perfect with raw seafood and more generally with Mediterranean dishes.

    In 1959, the year of its foundation, there were only 19. Today, the members of the Cantina Cooperativa Vinchio e Vaglio Serra number almost 200. In total, they manage around 450 hectares of vineyards with care and passion. In particular Barbera, the so-called 'Rubino di Vinchio', but also other typical local varieties, such as Dolcetto, Cortese, Grignolino, Nebbiolo, Brachetto, Moscato, Freisa and Bonarda. In addition to this dense group of autochthonous, i.e. typical local varieties, there are also international varieties that are best suited to the Piedmont hills, such as Pinot Noir, Chardonnay, Sauvignon and Viognier. The vineyards, mostly on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also helped by the nature of the soils, whose mineral components guarantee the production of high quality wines. The wine cellar, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
