    • This Bourgogne Blanc Terre de Molesme comes from the heart of Burgundy, one of the most prestigious wine regions in the world. It is produced by Vincent Couche's winery. A white wine made 100% from Chardonnay grapes, it combines tradition and innovation. The name comes from the Terre de Molesme parcel, located near the village of Molesme. This area is characterised by clay-limestone soils, ideal for growing Chardonnay. The combination of clay and limestone gives the wines a balanced structure and a distinctive minerality. Vincent Couche is a young winegrower who has been using Demeter-certified biodynamic practices in his vineyards since 2008, with the aim of preserving the biodiversity and vitality of the soil. For Terre de Molesme, Vincent has chosen a particular ageing process: 30% of the wine matures for two years in terracotta amphorae, while the remaining 70% rests in medium-sized wooden barrels. This method combines the micro-oxygenation of the amphora, which preserves the purity of the fruit, with the influence of the wood, which adds complexity and depth to the wine. The result is a white wine in full Burgundian style, with the wood well present but perfectly integrated. Bright straw yellow in colour, the nose offers fresh aromas of green apple, citrus fruits and delicate floral notes. In the mouth it is full and long, with a balanced structure and a pleasant acidity that gives it freshness. The minerality typical of clay-limestone soils emerges in the finish, giving the wine an elegant persistence. This Chardonnay goes well with fish menus, vegetable-based dishes, especially asparagus, and white meats such as chicken.

      Vincent Couche is a visionary winemaker who has steered his family business towards a sustainable and innovative future. With a strong awareness of the environment and product quality, Vincent embraced biodynamic viticulture in 2008, converting all the Maison's vineyards to this holistic philosophy. The grapes are grown without the use of pesticides or chemical herbicides, and in the cellar spontaneous fermentation and the use of oak barrels for the maturation of the base wines are favoured.
