    • Beloved in France and revered in different parts of the world, Pouilly-Fumé is an appellation wine made from Sauvignon Blanc grapes. Its origin is an area that lies in the vicinity of the course of the Loire River. We are around the municipality of Pouilly-sur-Loire, in the Nièvre department. Patrice Moreux's Pouilly-Fumé comes from grapes harvested in the company's biodynamically farmed vineyards, which are rooted in predominantly limestone soils with parts of silicon. And it is this combination of elements, combined with a cool and humid climate, that ensures that Sauvignon Blanc reaches perfect maturity, developing all the aromas typical for the variety. At that point Patrice Moreux's task is relatively simplified. In the cellar, in fact, he will have to limit himself to not spoiling what good things nature provides. Again, the winemaker chooses to make the most of his natural environment, avoiding the use of selected yeasts to activate fermentation but choosing to let the indigenous people initiate the delicate transformation process. The result? The ultimate in expressiveness. A surprising wine to pair with shellfish.

      Here we are looking at a small, indeed very small, producer in the Loire region. Domaine Patrice Moreux, in fact, can count on a total of less than 5 hectares of vines, in some of the best crus in the area. We are between Pouilly-sur-Loire and Sancerre, where Sauvignon is almost absolute master, thanks to the cool climate, ideal for its cultivation, and unique soil. Patrice Moreux is an ardent believer in the importance of following natural agronomic practices, and even in the winery he minimizes any outside intervention, including the use of indigenous yeasts that naturally jumpstart the fermentations of his wines. The entire winery operates under biodynamic agriculture, and the wines made from it are extremely territorial and always have great personality.
