Son of the beautiful hills of Burgundy, Bourgogne Hautes-Côtes de Beaune Blanc is a white proposed by Domaine Pillot-Henry. Elegance and complexity of Chardonnay from a vocated territory. The grapes, in fact, come from the renowned commune of Beaune, from a parcel bordering Pernand-Vergelesses. The vineyards, planted in 1990, insist on clay-limestone soils, rich in minerals that give the wine structure and minerality. The cool, sunny climate, with cool nights, favours a balanced ripening of the grapes, preserving their freshness and aromaticity. Harvested by hand, only the best grapes are vinified using careful and respectful methods. After fermentation, the wine matures for at least ten months in second and third passage barriques, enriching itself with tertiary notes. The wood gives it softness and depth, without ever overwhelming the typical freshness of Chardonnay. In the glass, it has a beautiful intense straw yellow colour, with golden reflections. The nose reveals heady aromas of juicy citrus fruits, such as lemon and grapefruit, intertwined with notes of ripe white fruit, white flowers and honey. The mouthfeel is enveloping with mineral notes and toasty nuances. The crisp acidity balances well the wine's natural softness, giving a lingering, mineral finish. To be discovered young, to appreciate its vibrant freshness, it also lends itself well to being kept for a few years in the cellar.
