Rich and generous, intense, exuberant, but at the same time fresh and lively, it expresses itself with grace and elegance, touching peaks of softness. Aroma of banana, cedar, flowers, spices, vanilla and oak balsams. The palate is creamily enveloped by such soft solicitation and the dense pulpiness of this wine, its intense power, expresses the tenor of its consistency.
The winery produces this wine from the pure vinification of 100% Chardonnay grapes. The production area is Frissonnière in the municipality of Saint Christophe in the province of Aosta, in the heart of the region. The Chardonnay vines are trained using the classic French Guyot system with an indicative total density of 7500 vines per hectare of land. The harvest, which is carried out manually, as per local tradition, takes place during the second half of September. Vinification is by soft pressing followed by fermentation in 300 litre French oak barrels. To guarantee the best balance between wood and wine, the barrels are treated with toasting, known as steam hydrolyzation. Finally the refinement takes place with the continuous "sur lies", and "batonnages" for 12 months. Final aging of 8 months in bottles at the producer’s winery. The noble tannins deriving from the precious woods, the permanence on the mother lees of first and second fermentation and the repeated batonnages confer ta remarkable taste & bouquet complexity to this wine, with remarkable balance that places it by right at the top of the of the Italian white wine production for quality.
