100% Chardonnay. But no ordinary grapes. Only the best grapes from two individual plots in the communes of Saint Pierre and Villeneuve. We are in the heart of Italy's smallest region, where the vineyards grow by snatching up precious bottomland hectares from the high peaks of the Alps. The plots chosen by Anselmet for this white are now thirty years old, planted around 1989. We are at an altitude of around 800/900 metres above sea level, therefore almost at the limits of vine cultivation in Italy. Vinification is simple but accurate. Temperatures are controlled at every stage to favour the preservation of the best aromas, the finest and most elegant ones. Before bottling, the wine is placed in steel containers, in contact with its fine lees. It remains here for at least 6 months, during which it undergoes regular bâtonnage. The result is a wine characterised by a beautiful, intense and brilliant straw yellow colour. The nose reveals white flowers, in particular chamomile, citrus fruits and white-fleshed fruits. On the whole, this is a decidedly fresh wine that reveals its Alpine origin well. Excellent as an aperitif, it is the wine that can tastefully accompany fish lunches and dinners. Try it with the classic spaghetti allo scoglio.
