  • Vinification Vinification: the clusters are subjected to gentle pressing with separation of the clear must from the more cloudy must. The clear must is then floated and transferred into stainless steel tanks for alcoholic fermentation, which lasts about 20 days at a controlled temperature of 16 to 18°C. Maturation: After alcoholic fermentation, the wine is racked into steel tanks at a controlled temperature of around 6°C in order to prevent malolactic fermentation from starting. It is then mellowed in steel for about 6 months before being transferred to the bottle, where it remains another 3 months before release.

    "Le Masche" Piemonte DOC Chardonnay 2023
  • Elegant as only a Chardonnay can be. A white of fine character and great personality, this La Masche, Piedmont DOC, is one of the wines offered by the historic Vinchio Vaglio winery. Grapes from the beautiful hills of the Langa Astigiana, harvested when fully ripe and brought early to the cellar to be transformed. The grapes are first subjected to soft pressing, with immediate separation of the clear must from the more cloudy one. Poured into stainless steel tanks, the must is fermented at a controlled temperature. At the end of the transformation, the wine continues to age in stainless steel for about 6 months, before being bottled and resting for a further 3 months in the cellar before release. In the glass, one discovers a wine characterised by a beautiful, limpid and brilliant straw yellow colour. The nose is pleasantly aromatic and typical, with fruit notes reminiscent of pear, banana and apple. On the finish, then, aromas of white acacia flowers and honey. On the palate, it is dry, savoury and fresh. A white wine with good persistence, it is ideal with seafood starters, white meats and smoked salmon.

    In 1959, the year of its foundation, there were only 19. Today, the members of the Cantina Cooperativa Vinchio e Vaglio Serra number almost 200. In total, they manage around 450 hectares of vineyards with care and passion. In particular Barbera, the so-called 'Rubino di Vinchio', but also other typical local varieties, such as Dolcetto, Cortese, Grignolino, Nebbiolo, Brachetto, Moscato, Freisa and Bonarda. In addition to this dense group of autochthonous, i.e. typical local varieties, there are also international varieties that are best suited to the Piedmont hills, such as Pinot Noir, Chardonnay, Sauvignon and Viognier. The vineyards, mostly on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also helped by the nature of the soils, whose mineral components guarantee the production of high quality wines. The wine cellar, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
