An unusual Chardonnay for a southern white, this wine from Tormaresca is appreciated above all for its freshness to which is added a pleasant intensity of aromas. It comes from grapes grown mainly in Masseria Maìme, in one of the most beautiful areas of Alto Salento, not far from the town of San Pietro Vernotico. Here the Chardonnay is harvested only when it has reached perfect technological maturity and immediately stored in the cellar. After a soft pressing, the must is cooled and kept at a temperature of 10 degrees for about 24 hours in order to obtain a natural decantation. It is then fermented with selected yeasts in temperature-controlled stainless steel tanks in order to enhance the aromatic qualities of the grapes. The subsequent ageing of the wine continues in steel until the bottling stage. Thus one discovers a beautiful goblet characterised by a straw yellow colour with greenish reflections of great brilliance. The nose reveals fresh notes of orange blossom, thyme, rose and lavender. In the mouth, on the other hand, one discovers a wine of excellent freshness and minerality, with a savoury and fruity aftertaste. A wine of great balance, it is the ideal companion for the whole meal. From hors d'oeuvres to main courses, when fish is the star of the table, this is the wine that should not be missing from the fridge.
