It is difficult to find a territory in which Chardonnay does not express itself to the full. But it is equally difficult, outside its native Burgundy, to find a place where it can produce such extraordinary wines as Alto Adige. The cooperative winery in San Michele Appiano has been producing this Sanct Valentin since 1986, using only grapes from selected micro-zones in the commune of Appiano, resulting in a fine white wine of considerable strength and elegance. The grapes are harvested at the end of September or the beginning of October. The vinification process involves alcoholic and malolactic fermentation, followed by lengthy ageing on the lees in barriques and tonneaux. Final blending takes place after almost a year, followed by a further maturing of at least eight months in steel. Straw yellow with light green hues, the nose has aromas of ripe fruit and vanilla and toasted notes. In the mouth, however, it is powerful and mineral. Simply unforgettable. An extraordinary wine today, it has good ageing potential. Properly stored, it can safely rest in the cellar for 10 years or more. It goes well with fish dishes, such as fritto misto, and meat dishes, such as roast chicken or cotoletta alla milanese.
