The Sauvignon Alto Adige DOC from Cantina Valle Isarco is a jewel of the Alps. With its majestic Dolomites and vineyards climbing steep slopes, South Tyrol is one of the most fascinating wine-growing regions in Italy. And it is precisely in this setting, amidst the mountains of the Isarco Valley, that this Sauvignon, a white wine that expresses the unique character of the region, is born. Alluvial soils, rich in porphyritic sediments, and a cool, sunny climate give Sauvignon a unique minerality and freshness. The altitude, which varies from 450 to 750 metres, helps slow down the ripening of the grapes, resulting in wines with lively acidity and intense aromas. Sauvignon Blanc, one of the most widespread white grape varieties in the world, finds an ideal habitat in South Tyrol. Here it expresses itself in wines characterised by intense aromas of white-fleshed fruit, aromatic herbs and mineral notes. The grapes are harvested by hand and gently pressed. The must ferments at a controlled temperature in stainless steel tanks to preserve freshness and fruity aromas. Maturation on fine lees gives the wine greater complexity and structure. To the eye, it has a brilliant greenish yellow colour. On the nose, it reveals an intense and complex bouquet, with notes of cut grass, grapefruit, blackcurrant and a slight hint of flint. In the mouth, it is dry, fresh and savoury, with a medium body and a long, persistent finish. It goes well with fish dishes, shellfish, white meats, fresh cheeses and grilled vegetables. It is also ideal as an aperitif.
Despite the fact that the Valle Isarco valley has a very old winemaking tradition, the beautiful social wine cellar was only founded in 1961 by 24 families. Cantina Valle Isarco is the youngest wine cooperative in South Tyrol and today, after more than 60 years of existence, it can count on the work of no less than 135 members who cultivate a total of 150 hectares of vineyards, spread over 11 municipalities from Bolzano to the south of Bressanone. The Eisack Valley offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and, above all, terraced vineyards with their tidy stone walls. Here, the winegrowers do ‘heroic’ work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by hot summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco's annual production is around 950,000 bottles, divided between no less than 14 varieties, of which 10 white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's ‘white’ vocation is best expressed by the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
