A very sophisticated sauvignon blanc that is a wonderfully elegant synthesis of the grape’s fresh and ripe sides. Everything from bell pepper to exotic fruit, but not a jot too much of any of them. Concentrated mid-palate, then a very long, complex finish that deserves your full attention. Drink or hold.
It is impossible not to love this fresh, aromatic white. This is in fact a fabulous Alto Adige Sauvignon. One of the good wines of the Praepositus line from the Novacella Abbey winery. One of those wines that can put a smile on the face of mountain wine lovers. This Sauvignon is made from superbly well-processed grapes harvested when fully ripe and has a beautiful golden yellow colour with greenish highlights. If the aromaticity is typical of the vine, the minerality that emerges clearly from the first sip is largely due to the territory of origin. Above it all, however, there is a clear note of green pepper, the one that every good sommelier always associates with Sauvignon, nettle and grapefruit. Then elderflower and cassis. In the mouth, it is a powerful wine, rightly aromatic, with a savoury aftertaste. For a local pairing, the choice could fall on an intriguing dish of canederli, perhaps served with a chanterelle sauce. For an unusual combination, however, the advice is to try it with a good buffalo mozzarella. Simply delicious.
It is impossible to think of South Tyrol as a wine-producing area without looking at the hills where the vineyards of the historic Abbey of Novacella are located. This is one of the oldest still active wineries in the world. The first documentary evidence of the Abbey dates back to 1100. In 1177, to be precise, Pope Alexander III granted the monastery possession of the nearby vineyards and over the centuries, through donations, foundations, purchases and exchanges, the Abbey accumulated considerable vineyard holdings. Some of these are still in the hands of the present-day company. From the bottom of the valley, i.e. from about 600 metres above sea level, the vineyards of Novacella reach an altitude of almost 900 metres. Even today, many farmers still bring their best grapes to the abbey's wine cellar so that they can be carefully processed into the excellent wines that are appreciated all over the world.
