Schlossgarten, literally 'The Castle Garden', is a fabulous pure Sauvignon from the eclectic brothers of the Pitzner Winery. Mid-mountain vineyards, located in Cornedo, about 380 metres above sea level. Vineyards 20/25 years old, with well-established roots on deep, sandy porphyry soils. Here the grapes reach full ripeness between the end of August and mid-September, when the delicate manual harvesting phase begins, with careful selection of the bunches. Once in the cellar, the grapes are gently pressed and the must obtained is left to settle naturally. This is followed by fermentation at a controlled temperature in stainless steel tanks and maturation for about 5 to 6 months on the fine lees, partly in stainless steel barrels (about 80%) and partly in 500-litre French oak casks. The result is a beautiful wine characterised by an intense, bright straw-yellow colour with a delicate greenish veil. Fruity aromas of apricot, mandarin and passion fruit stand out on the nose. Then elderflower, gooseberry and mint. In the mouth, the fruity character already perceived on the nose is confirmed, with a delicate acidity and good structure. The finish is mineral and at the same time rich in aromas. Excellent with white asparagus, it goes well with delicate tuna carpaccio, smoked salmon or raw scampi. For lovers of terroir pairings, Schlossgarten is the right wine to accompany typical nettle dumplings or a good, unripened goat cheese.
