  • Sensations The intense aroma of nettle and elderflower and the freshness and liveliness in the mouth are typical for this wine. Minerality and fresh acidity balance with body and aromas on the palate.
  • Vinification Harvesting is carried out manually in small containers for transport to the winery. After a brief maceration and whole cluster crushing, the must undergoes natural sedimentation. Fermentation at controlled temperature in stainless steel vats. Aged on fine lees in stainless steel tanks and large oak barrels without malolactic fermentation for 8 months.

  • Only the best grapes, from the most suitable areas, end up in the bottle of this Sauvignon by Cantina Girlan. The production area coincides with the municipalities of Cornaiano, Monticolo and Appiano Monte, at 500 metres above sea level. A mix of soils and exposures that allows the Sauvignon grape, worked in purity, to give excellent results and give the wine a unique character. Brief maceration and pressing of whole bunches. Then fermentation at controlled temperature in stainless steel vats and refinement on fine lees, again in steel, and in large oak casks for 8 months. Straw yellow in colour, the nose is striking for its intense aroma of nettle and elderflower. In the mouth it is fresh and lively but well balanced thanks to a certain corpulence. Excellent with fish dishes, it also goes well with white meat dishes.
