    "Schliff" Sauvignon Alto Adige DOC 2021
  • The Sauvignon Alto Adige DOC Schliff is a very interesting wine, perfect for those who want to capture all the richness of Sauvignon in South Tyrol. It is produced by the renowned Kellerei St. Pauls, and is a kind of tribute to the richness and diversity of the South Tyrolean terroir. Schliff, in fact, originates in an enchanting corner of South Tyrol, on the south-eastern slope of the mountains, from vineyards located at an altitude between 420 and 490 metres. Here, the soil is composed of deep moraine and limestone rubble, enriched by the presence of large porphyry blocks. These elements give the soil unique characteristics that give the wine complexity and minerality. The Sauvignon, originally from the Loire region but perfectly adapted here in South Tyrol, comes from vines between 30 and 37 years old. Schliff starts with a short maceration in the press, followed by controlled fermentation in stainless steel. The wine then matures for about 9 months on fine lees, acquiring greater complexity and structure, as well as a fine texture and a lingering finish. In the glass it reveals a rich and complex bouquet. Hints of elderflower, mango, gooseberry and grapefruit emerge on the nose and blend well with delicate herbal aromas and a subtle touch of flint. In the mouth it is juicy and fine, with a marked minerality that makes it pleasant and intriguing. The finish is long and persistent. This Sauvignon is perfect as an aperitif and a perfect companion for tuna, poultry and white meats in general. Perfect for any occasion.

Founded in 1907, it currently unites around 200 members who work their vineyards with passion, often by hand, and deliver their best grapes to the cellar. In total, the vineyards belonging to St. Pauls comprise about 185 hectares, spread over the most suitable areas of the valley surrounding the village of St. Pauls/Appiano. Over one and a half million bottles are produced each year, which reach the markets of the world from South Tyrol, to the delight of many wine lovers. The production consists mainly of white, dry and aromatic wines.
