Sabiona Sylvaner originates in the heart of the Eisack Valley, one of the most picturesque and southernmost wine-growing areas in South Tyrol. This area is distinguished by its unique characteristics: the vineyards are located on steep, sunny slopes, between 400 and 900 metres above sea level, while the climate is alpine and benefits from strong temperature fluctuations. The alluvial soils of this area, rich in diorite and skeleton, give the grapes minerality and complexity. The Sylvaner, a variety that has been cultivated in the Isarco Valley for over a century, has adapted perfectly to these soil and climate conditions. It expresses itself best in cool environments and on lean soils, where it is able to develop complex aromas and vibrant acidity. After manual harvesting and gentle crushing, the grapes remain in contact with the skins for a short period, favouring the extraction of aromas. Fermentation takes place in tonneaux, followed by 15 months of maturation on the noble lees. Malolactic fermentation is not carried out, thus maintaining a vibrant freshness. Finally, the wine rests for a further 9 months in the bottle, achieving perfect harmony. In the glass, it has a light yellow colour with greenish reflections. The nose reveals a bouquet that ranges from notes of green apple and pear to nuances of aromatic herbs and delicate spices. In the mouth, however, it reveals an important structure and a pleasant, long and persistent aftertaste. Good balance between minerality and fruit. Try it with fish dishes, such as alpine trout or white fish carpaccio. Also ideal with light pasta dishes, herb risottos or grilled vegetables. For fans of the South Tyrolean tradition, try it with spinach dumplings.
Although the Valle Isarco boasts a very old wine-making tradition, the beautiful wine cellar was only founded in 1961, by 24 families. Cantina Valle Isarco is the youngest wine cooperative in South Tyrol and today, after more than 60 years of existence, it can count on the work of no less than 135 members who cultivate a total of 150 hectares of vineyards, spread over 11 municipalities from Bolzano to the south of Bressanone. The Eisack Valley offers one of the most beautiful natural landscapes in South Tyrol, characterised by majestic mountains, ancient farms, castles, monasteries and villages, magnificent chestnut groves and, above all, terraced vineyards with their tidy stone walls. Here, the winegrowers do ‘heroic’ work, accustomed as they are to caring for predominantly steep terrain, with plants growing up to 950 metres high. Vineyards that are often tiny in size but just as often characterised by unique soil and climate conditions. The special microclimate of this area, characterised by warm summer days and cold nights during the harvest period, ensures the production of fresh, fruity and mineral-rich wines. Overall, the Cantina Valle Isarco's annual production is around 950,000 bottles, divided between no less than 14 varieties, of which 10 white and 4 red. The total number of labels is 28, including some very interesting special editions. The winery's ‘white’ vocation is best expressed by the good local grape varieties, such as Kerner, Sylvaner, Grüner Veltliner, Gewürztraminer and, of course, Müller Thurgau.
