The name Merus means ‘pure’ in Latin and fully reflects the philosophy behind this line of wines from Tiefenbrunner. Alto Adige DOC, Merus Sauvignon expresses the distinctive character of this fabulous aromatic grape variety with purity. The grapes come from the Bassa Atesina, an area in Alto Adige that is particularly suited for the cultivation of white wines. The terroir is characterised by limestone gravel of moraine origin, i.e. debris carried by glaciers, which lends a special minerality to the grapes. This composition of the soil, combined with the strong temperature variations between day and night, helps to develop intense aromas and enhance the freshness of the wine. 100% Sauvignon Blanc, to maintain the freshness and typicality of the fruit, the grapes are vinified in cement and steel tanks. Fermentation takes place at a controlled temperature for 10 days, after which the wine is matured on the lees for four months before bottling. This vinification process helps to preserve the aromas and give the wine a beautiful structure. To the eye, Merus has a brilliant yellow colour with green reflections that express freshness. The nose releases pleasant notes of nettle, elderflower, sage and mint, which recall the liveliness and typicality of Sauvignon Blanc.
