  • Sensations The Chardonnay "Cardellino" has an intense straw yellow colour. A complex interplay of fruity aromas, orange and lemon peel, notes of lime blossom, mineral profusion and a spicy hint of tobacco characterise the bouquet. This classic from Elena Walch convinces on the palate with its freshness and lively minerality, which lingers elegantly and closes with a long, intense and soft finish.
  • Vinification Soft pressing of the grapes, followed by static decantation of the must. Fermentation at a controlled temperature of approx. 20°C. At the end of fermentation, the must remains in contact with the yeasts for a long time. Part of the must (approx. 15%) is fermented and matured in French oak barrels for 5 months. After racking at the end of fermentation, the wine remains on the lees for a long time. The wine is blended in spring.

  • There is always a curious reason for the names Elena Walch gives her wines. In this case, too, the name Goldfinch, which by the way was the first wine from the Walch house and is still one of the best-loved, was not given by chance. It is said, in fact, that these little birds love to build their nests on the very Chardonnay vines that give life to this interesting mountain white. An important wine with character, this Chardonnay is the result of careful processing in the cellar. Part of the must is fermented and matured in French oak barriques for 5 months. And after racking at the end of fermentation, the wine remains on the lees for a long time. At least until the following spring, when it is finally assembled. Cardellino has a beautiful, intense straw yellow colour. The nose reveals a complex bouquet of fruity aromas, orange and lemon peel, notes of lime blossom, a mineral sensation and a spicy hint of tobacco. In the mouth, however, it surprises with its freshness and lively minerality. The finish is long, intense and soft. Excellent as an aperitif, it goes well with smoked salmon and savoury pasta dishes.
