    • We are in the heart of Burgundy, where the Serein river shapes the landscape and where the Chablis region is located. Here, the soils have a unique origin. They are called Kimmeriggiani, composed of limestone marls and marine fossils. And it is here that the roots of the 100-year-old vines from which this fine Chablis Vieilles Vignes AOC by Séguinot Bordet originates. Made from 100% Chardonnay grapes, which, in this area, finds its most authentic expression. The grapes, harvested by hand at the right stage of ripeness, are vinified with the utmost care to preserve their most delicate aromas. Processing takes place entirely in steel at a controlled temperature, so as to enhance the wine's freshness and minerality, while preserving elegance and complexity. Brilliant and clear straw yellow, the nose reveals a wide range of aromas ranging from white flowers such as broom and acacia, to hints of ripe fruit such as peach and citrus. A touch of vanilla completes the bouquet, giving it a note of refined elegance. Chablis Vieilles Vignes is a wine to be drunk young, within three years of the harvest. During this period, it expresses its freshness and vivacity at its best. However, a short ageing period can help to enhance its complexity and depth. At the table, let's pair it with fish dishes, shellfish and seafood. Its freshness and fine minerality, however, also make it suitable to accompany delicate white meats and vegetable dishes.       Domaine Séguinot Bordet is located in the heart of Burgundy, immersed in the picturesque setting of Chablis-Maligny. It is a historic entity that has been carrying on the tradition of producing Chablis of excellence since 1560. The winery has always been owned by the Séguinot Bordet family and is now led by Jean-François Bordet, heir to an ancient savoir-faire handed down from generation to generation. Jean-François, who succeeded his grandfather Roger, has been able to combine tradition with innovation, making Domaine Séguinot Bordet a cutting-edge company. The winery's strong point is its vineyard: 16 hectares stretching out on the right bank of the Serein river, considered the area most suited to the production of the greatest Chablis wines. Most of the vines, over 100 years old, are rooted in soil rich in Kimmerian sediment, a distinctive element that gives Séguinot Bordet wines their unmistakable iodine, mineral and flint character.
