Henry of Pelham Family Estate processes its Chardonnay with a distinctly French style. Vineyards in the Niagara Peninsula area, after the harvest the grapes are brought quickly to the winery to be processed in full respect of the starting fruit. Fermented in stainless steel at a controlled temperature, before racking the wine is left to age sur lie, that is, on its noble lees, to gain greater complexity and depth of flavor.
