An explosion of lemon blossom and white spring flowers is followed by lemon essence and other citrus fruits. Aromas of cashew nuts, pistachio nougat and beeswax are reminiscent of the wine's ageing in oak. A persistent citrus line surrounded by white stone fruit. Once again, a beautiful linearity is evident. All balanced by a savoury acidity and subtle nuttyness. If this acidity is quite pronounced (almost concise), the French oak undertone is not... A fresh climate mix of three great regional sources of Chardonnay - satisfying all tastes and structural expectations.

    "BIN 311" Chardonnay 2019
  • A truly interesting wine, made from pure Chardonnay grapes from different wine regions of Australia. This makes Penfolds' BIN 311 a white wine that well represents the complexity and versatility of Chardonnay. The grapes, in fact, come from three distinct areas: Adelaide Hills, Tumbarumba and Tasmania. Adelaide Hills, in particular, is located south of Adelaide, with a cool Mediterranean climate characterised by cold winters and hot summers. Tumbarumba, on the other hand, is located in New South Wales and has a cool continental climate. Finally, Tasmania is an island that boasts a cool maritime climate with mild temperatures and well-distributed rainfall throughout the year. The vinification of BIN 311 takes place in small stainless steel tanks, preserving the freshness and fruity aromas. The wine then rests for 8 months in French oak barrels, about a third of which are new, acquiring complexity and elegance. The nose impresses with an intense and seductive bouquet. Hints of lemon blossom and white flowers intertwine with notes of lemon and other citrus fruits. Scents of cashews, pistachio nougat and beeswax instead reveal the presence of wood. In the mouth, it is medium-bodied, with a crisp acidity that balances the softness of the fruit. The minerality typical of certain areas combines with notes of citrus fruits, apple, pear and white peach. A touch of toasted hazelnut completes the sip, giving a long and persistent finish. It perfectly complements fish dishes, shellfish, white meats and vegetables. Try it with seafood risotto, baked salmon, roast chicken and fresh cheeses.

    Established in 1844 by Christopher Rawson Penfolds, the Penfolds Estate is still one of Australia's best-known and most respected wineries. The founder was a young English-born doctor and was firmly convinced of the healing properties of wine. That is why, before leaving his homeland for the other side of the world, he procured French vines that were planted in Adelaide, near the cottage that Penfold built with his wife. Initially, the Penfolds winery produced almost exclusively brandy and fortified wines, to be used for medicinal purposes. Then, around 1950, the slow migration towards the production of table wine began. Today, the company is owned by Tooth and Co. and there is total respect for the environment in the countryside. This, combined with perfect control of every stage of processing, allows Penfolds to continue to surprise wine lovers and experts, year after year, with more and more interesting wines.
