Among those who have taken a sommelier course, the memory of the first 'aromatic' wine tasted is certainly linked to a white wine, French or Italian, produced from Sauvignon Blanc, a white grape variety native to France, in particular the Loire wine region. After all, it is one of the most widely cultivated white grape varieties in the world. With a thick skin and intense acidity, it produces fresh, unmistakable wines with typical aromas of currant, tropical fruit, lemon and green pepper. A fine example is this 'Selection' from Domaine des Tilleuls, a white wine made from 100% Sauvignon Blanc grapes. The vineyards that give life to this wine are located in the La Regrippière area, with very special soil and a temperate oceanic climate. Gentle pneumatic pressing and static settling are the first operations carried out once the grapes arrive at the winery. Then follows the low-temperature alcoholic fermentation phase and a 6-month ageing of the wine on its fine lees in underground glass tanks typical of the Pays Nantais. In the glass, the Sauvignon Blanc 'Selection' is yellow in colour with greenish highlights and the nose is expressive, with notes of citrus, tropical fruit and vegetables. On the palate, however, it is pleasantly balanced and versatile, with a nice liveliness and a perfect correspondence to what was previously perceived. Perfect as an aperitif, it goes well with goat cheese, seafood, marinated anchovies and fish dishes.
Domaine des Tilleuls covers about 35 hectares at La Regrippière in Vallet, in the Nante region. We are about 50 kilometres from the ocean, where the Melon de Bourgogne grape variety reigns supreme in the production of Muscadet. We are south of the Loire, where the climate is oceanic and enjoys mild winters and hot, dry summers, never with extreme temperatures. Viticulture at Domaine des Tilleuls is geared towards sustainability and the techniques for processing the grapes, which come from vines between 15 and 30 years old, are simple and rigorous. The history of Domaine des Tilleuls began in 1905 with Auguste Godefroy who, having inherited a few plots of vines with great potential for producing high quality wines, decided to take up the vine growing trade. His nephew, Gaby Houssin, bought an old farm in the place called 'Les Tilleuls', taking all the surrounding land and vines, including some of the oldest Muscadet plots, and built a new stone wine cellar, equipped with barrels and some underground vats covered with glassy material, typical of the village of Nantes, to produce fine wines. Today, thanks to the passion of Jérôme and Noemie, the fifth generation of the family, the domaine enjoys considerable international development.
