The one proposed here is a Bordeaux Blanc produced by the Château Lamothe Vincent winery. A typical white wine for the region, made from a blend of Sauvignon Blanc grapes, over 85% and Sémillon for the remainder. The grapes used in this case come from three plots located in Montignac, where the winery is also based, Castelvieil and Daubéze. The soils here are clayey, with the presence of silica, limestone and iron. Harvesting is manual and is followed by a short maceration phase on the skins and, at the end of fermentation, also a period of 2 to 6 months on the fine lees. The wine is light yellow in colour with greenish highlights. The nose reveals notes of pineapple, apricot, exotic fruits and grapefruit. In the mouth, however, it stands out for its fine balance between freshness and softness. The finish, decidedly persistent, recalls exotic fruits. To be best appreciated, it should be served at a temperature of 8-10°C. On the table it goes well with seafood dishes, white meats and goat's cheese.
