Those who think that the Bordeaux region can only give great red wines are wrong. The latter are certainly the best known, but they represent only a portion of the total production. The Graves area in particular produces excellent white wines from the region's typical grape varieties, Sémillon and Sauvignon Blanc. As in this case, where small percentages of Sauvignon Gris and Muscadelle are added to the two biggies. Harvested when perfectly ripe, in this case the grapes are pressed whole in an inert atmosphere to preserve the aromas. At that point, after racking, the must is fermented in oak barrels. The same material is also used for the next stage of maturation, which takes place in contact with its own yeasts. Straw yellow with beautiful intensity, this white has fresh aromas of lime zest, green pear and minerals. The mouth reveals a nice body, with bright and pleasant acidity. Lingering notes of beeswax and lemon for a wine that requires some serious pairing. Excellent with delicately spiced or savory dishes.
